Prawn, watermelon and fetta skewers with mint oil

Watermelon cubes add a burst of summer freshness to these prawn, fetta and cucumber skewers.

Ingredient

  • 1 continental cucumber, peeled into ribbons
  • 1/4 watermelon, cut into 2cm pieces
  • 24 Coles Cooked Black Tiger Prawns, peeled leaving tails intact, deveined
  • 200g Tasmanian fetta, cut into 2cm pieces
  • 1/2 cup mint leaves
  • 1/3 cup (80ml) extra virgin olive oil
  • 1 tbsp lemon juice
Direction
  1. Thread the cucumber, watermelon, prawns and fetta evenly onto skewers. Arrange on a serving platter.
  2. Blend mint, oil and lemon juice in a blender until smooth. Season. Drizzle over the skewers. Serve immediately.
